Cajun Chicken Lettuce Cups
These cajun chicken lettuce cups are full of flavour and so much. The kids will love putting together this colourful dinner. Eating all of the colours of the rainbow is a great way to boost gut health.
Ingredients
500g breast chicken, diced
2 1/2 tbsp ground paprika
2 tbsp ground onion
2 tbsp ground garlic
2 tbsp dried oregano
1 tsp black pepper
1 tsp salt
2 baby cos lettuce
1 cucumber, diced
1 carrot, shredded
200g cherry tomatoes, halved
Alfalfa sprouts
chopped parsley
1/2 cup Greek yoghurt
Juice of 1/2 lemon
Method
Combine the ground paprika, ground onion, ground garlic, dried oregano, black pepper and salt in a small ball. Place the diced chicken in a large mixing bowl. Sprinkle the cajun spice mix over the chicken, drizzle with olive oil and stir until all of the chicken is covered in the spices.
In a frypan over medium heat, add the seasoned chicken in an even layer. Cook, without stirring for 3 to 4 minutes then stir and continue to cook, stirring occasionally, until browned and cooked through.
Peel all the lettuce leaves apart, wash and then dry. Place the lettuce leaves on a plate, and the cucumber, carrot, cherry tomatoes, alfalfa sprouts and parsley all in seperate bowls to serve. Combine the greek yoghurt and lemon juice in a bowl (use this as dressing).
Place the chicken, lettuce cups and bowls on the table. Allow everyone to assemble a lettuce cup with the ingredients they like.
