Overnight Chia Oats Two Ways

 
Overnight chia oats in jars with fruit

Overnight oats are such a great way to ease stress during those busy mornings. They are a great breakfast the whole family can enjoy. With little prep the night before you have a go to breakfast for a few days of the week.

I have included two variations of this recipe. We tend to make the Banana & Almond recipe in winter and the Mango and Blueberry in summer time.


Ingredients

  • 2 cups natural oats

  • 1 cup quinoa flakes

  • 1/2 cup chia seeds

  • 1/3 cup hemp seeds

  • 1/3 cup flax-meal

  • 1 cup greek yoghurt

  • 1 1/2 cups almond milk

  • 1/4 cup pure maple syrup

  • 1 tbsp vanilla extract

    TOPPINGS

  • 2 banana’s sliced

  • 1/2 cup almond butter

  • 1/3 cup silvered almonds

  • 1 mango diced

  • 1 cup blueberries

  • 1/2 cup shredded coconut


    Method

  1. In a large mixing bowl combine the oats, quinoa flakes, chia seeds, hemp seeds and flax-meal, stir until well combined. Now add all of the wet ingredients; yoghurt almond milk, maple and vanilla extract. Whisk everything together until well combined.

  2. You can either arrange in jars with the fruit now or cover the bowl and place in the fridge as is overnight then arrange in the morning in bowls. Jars are a great on the go option that I find kids love!

  3. Starting with the banana and almond mix, arrange a layer of sliced banana to the bottom of the jar, top with a tbsp of almond butter and some slivered almonds. Add the oat and chia mix on top until the jar is 3/4 full. Top with another layer of banana slices, almond butter and slivered almonds.

  4. For the mango and blueberry jars repeat the same layering process but used the diced mango, blueberries and desiccated coconut.


Ana’s tips & advice

  • Store your overnight chia oat jars, covered in the fridge for up to 4 days.

  • Change up the fruit depending on the season you are in.

  • For a dairy free option swap the greek yoghurt over for coconut yoghurt.

  • Get the little ones involved. This is a great recipe for them to practise their cooking skills and improve their relationship with food.
