Lemon Poached Chicken

Ingredients
  • 2 Chicken Breast

  • 1 Lemon, 1/2 juiced & 1/2 sliced

  • 1 tbsp peppercorns

 
 
Method
  1. In a large pot add filtered water, lemon juice and lemon slices. Season the water with salt and pepper corns.

  2. Once the water starts boiling add your chicken breasts and place the lid on top. Allow the water to come back to the boil and cook for 5 min. Turn the heat off and allow to keep cooking for 40min with the lid on.

  3. Remove chicken from water and let it rest for 5-10 minutes before slicing or shredding.
