Bacon Zucchini Slice

Ingredients
  • 2 Zucchini’s, grated

  • 250g Bacon, diced

  • 1 Brown Onion, diced

  • 6 Free Range Eggs

  • 1/3 cup Extra Virgin Olive Oil

  • 1/3 cup Almond Milk

  • 1 cup Rice Flour

  • 1 tsp Baking Powder

  • 2 tsp Stock

  • 2 tsp Dried Italian Herbs

 
 
Method
  1. Preheat oven to 180c and line a rectangular baking dish with baking paper.

  2. In a large bowl combined the eggs, olive oil, milk, flour, baking powder, dried herbs and stock, whisk together until well combined.

  3. Then stir through the onion, zucchini and bacon. Pour the mixture into your dish and bake in the oven for 30min or until golden and cooked through.

  4. Allow to cool and then cut into squares. Store in a glass container in the fridge for up to 3 days.
