Raspberry Chia Jam
Ingredients
500g frozen raspberries
1/4 cup lemon juice
1/2 cup chia seeds
3 tbsp raw honey
Ana’s Tips
Store in a glass, airtight jar in the fridge for up to a week.
For extra sweetness you can also add some natural maple syrup.
You can easily make this same recipe with frozen strawberries or blueberries.
Method
1. Add the raspberries to a large pot over a medium heat. Add the lemon juice, stir and mash frequently with a spatially until the raspberries have completely broken up and moulded together into a thick paste like form.
2. Remove from the heat. Add the chia seeds and honey and stir through until well combined. Set aside to cool and thicken up then transfer to a jar and store in the fridge.
Use as a topping on toast, yoghurt, porridge, pancakes and more.
